Vegetable Tagine with Apricot Quinoa

Ingredients

 

The Main Event (Allergens in Bold)

 

Chickpeas, Chopped Tomatoes, Butternut Squash, Quinoa, Red Pepper, Red Onion, Almond Milk, Flaked Almonds, Tahini Paste (Contains Sesame), Fresh Coriander, Fresh Mint, Vegetable Stock (Contains Celery), Apricots (Contains Sulphites), Garlic Cloves, Turmeric, Paprika, Preserved Lemon (Contains Sulphites), Coconut Oil, Ground Cinnamon, Cumin

 

The Extras

 

Almonds (Contains Nuts), Tahini Dressing (Contains Nuts, Sesame and Suphites), Cranberries (Contains Sulphites)

 

How To Cook

 

First things first - please defrost by placing me from freezer to fridge the night before eating (take us out of our super frozen state that has locked in the colour, taste and nutritional values to perfection).

 

Slide off my sleeve and remove my lid (it is not microwavable!). Add 2 tbsp of water and cover. Microwave me for 5 minutes (800w) stirring halfway. Stir well and leave me to stand for 1 minute. Chop up my extras and arrange in an artistic fashion.
